Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • For the Bruschetta Topping
  • 2 cups ripe Roma tomatoes diced
  • ¼ cup fresh basil chopped
  • 2 garlic cloves finely minced
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 tablespoon balsamic vinegar
  • Salt to taste
  • Black pepper to taste

  • Balsamic glaze
  • Extra fresh basil
  • Additional Parmesan cheese

Instructions

  • Pat the chicken breasts dry with paper towels and season both sides with Italian seasoning, garlic powder, paprika, salt, and black pepper.
  • In a bowl, combine the diced tomatoes, fresh basil, minced garlic, olive oil, balsamic vinegar, Parmesan, salt, and black pepper. Gently toss and set aside.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the chicken breasts and cook for about 5–7 minutes per side, depending on thickness.
  • Cook until the thickest part of the chicken reaches 165°F (74°C).
  • Transfer the chicken to a plate and let it rest for about 5 minutes.
  • Spoon the fresh bruschetta topping generously over each chicken breast.
  • Drizzle with balsamic glaze and garnish with extra fresh basil and Parmesan.
  • Serve immediately with your favorite side dish.

Notes

  • Use ripe, firm tomatoes for the best bruschetta topping.
  • If chicken breasts are very thick, pound them to an even thickness before cooking.
  • Don't prepare the tomato topping too far in advance because it can become watery.
  • Store the chicken and bruschetta topping separately for the best texture.
  • Refrigerate leftovers for 3–4 days.
  • The cooked chicken can be frozen for up to 3 months.
  • Always use an instant-read thermometer to check that the chicken reaches 165°F (74°C).
