Ingredients

For the Chicken- 2 large chicken breasts- 2 tablespoons olive oil- 1 teaspoon paprika- 1 teaspoon garlic powder- 1 teaspoon Italian seasoning- 1/2 teaspoon onion powder- Salt and black pepper to taste

For the Alfredo Sauce- 3 tablespoons butter- 6 cloves garlic, minced- 2 cups heavy cream- 1 1/2 cups freshly grated Parmesan cheese- Salt and black pepper to taste

For the Pasta- 12 oz (340 g) fettuccine- 1 cup reserved pasta water

Instructions

  • Cook the fettuccine in salted boiling water until al dente. Reserve 1 cup pasta water before draining.
  • Season the chicken with paprika, garlic powder, Italian seasoning, onion powder, salt and pepper.
  • Heat olive oil in a skillet over medium-high heat. Cook chicken for 5–7 minutes per side until fully cooked. Rest for 5 minutes before slicing.
  • In the same skillet melt butter and sauté garlic for 30 seconds.
  • Add heavy cream and simmer gently.
  • Gradually whisk in Parmesan cheese until smooth.
  • Toss cooked pasta in the Alfredo sauce.
  • Add reserved pasta water if needed to thin the sauce.
  • Top with sliced chicken.
  • Garnish with extra Parmesan and parsley before serving.

Notes

• Always use freshly grated Parmesan.
• Do not boil the cream.
• Reserve pasta water for the perfect sauce consistency.
• Serve immediately.
