Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil

  • 1 teaspoon Italian seasoning
  • 4 ounces soft goat cheese
  • 1/2 cup oil-packed sun-dried tomatoes chopped
  • 2 tablespoons fresh basil chopped
  • 4 tablespoons unsalted butter
  • 3 cloves garlic minced
  • 1/2 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons grated Parmesan cheese optional
  • Fresh basil leaves for garnish

Instructions

  • Pat the chicken breasts dry and season both sides with salt, pepper, and Italian seasoning.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Cook the chicken for 5 to 6 minutes per side until golden brown and the internal temperature reaches 165°F (74°C). Transfer to a plate and keep warm.
  • Reduce the heat to medium and melt the butter in the same skillet.
  • Add the minced garlic and cook for about 30 seconds until fragrant.
  • Pour in the chicken broth and fresh lemon juice, scraping up any browned bits from the bottom of the skillet.
  • Let the sauce simmer for 3 to 4 minutes until slightly reduced.
  • Stir in the chopped sun-dried tomatoes and fresh basil.
  • Return the chicken to the skillet.
  • Top each chicken breast with goat cheese.
  • Spoon the hot lemon butter sauce over the chicken.
  • Cover for 1 to 2 minutes until the goat cheese softens.
  • Garnish with fresh basil and serve immediately.

Use fresh lemon juice for the brightest flavor.
Oil-packed sun-dried tomatoes provide the best texture and taste.
Do not overcook the chicken to keep it juicy.
Allow the sauce to reduce slightly before serving.
