Ingredients

  • 2 pounds sirloin steak cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 5 garlic cloves minced
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon fresh thyme optional
  • ½ teaspoon crushed red pepper flakes optional

Instructions

  • Pat the steak dry with paper towels, then cut it into evenly sized bite-sized cubes.
  • Season the steak with salt, black pepper, smoked paprika, onion powder, and Italian seasoning.
  • Heat olive oil in a large cast-iron skillet over medium-high heat until very hot.
  • Add the steak cubes in a single layer and cook for about 2 minutes per side until browned. Cook in batches if necessary.
  • Transfer the steak to a plate.
  • Reduce the heat to medium. Add butter to the skillet.
  • Add minced garlic and cook for 30–45 seconds until fragrant.
  • Return the steak to the skillet and toss until coated with the garlic butter sauce.
  • Sprinkle with fresh parsley and thyme.
  • Serve immediately with mashed potatoes, rice, roasted vegetables, or pasta.
