Instructions
Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick cooking spray.
In a large mixing bowl, combine the softened cream cheese, sour cream, cottage cheese, cream of chicken soup, garlic powder, onion powder, and black pepper. Stir until smooth and creamy.
Fold the shredded chicken into the mixture, then add 1 cup of the shredded cheddar cheese. Mix until the chicken is evenly coated.
Spread the chicken mixture evenly into the prepared baking dish.
In a separate bowl, combine the crushed Ritz crackers with the melted butter. Mix well until all the cracker crumbs are coated.
Sprinkle the buttery cracker mixture evenly over the casserole, then top with the remaining ½ cup of shredded cheddar cheese.
Bake uncovered for 30 to 35 minutes, or until the casserole is hot and bubbly and the topping is golden brown.
Remove from the oven and let the casserole rest for 5 to 10 minutes before serving. Garnish with chopped fresh parsley if desired and serve warm.
Notes
Rotisserie chicken is a great time-saving option for this recipe.Allow the cream cheese to soften before mixing for a smoother filling.Freshly shredded cheddar cheese melts better than pre-shredded cheese.Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
