Equipment

  • Large oven-safe skillet
  • Chef's Knife
  • Cutting board
  • Mixing bowl
  • Kitchen Tongs
  • Spoons
  • Measuring
  • Instant-Read Meat Thermometer
  • Baking Dish

Ingredients

Chicken : 4 boneless, skinless chicken breasts 1 tablespoon olive oil 1 teaspoon garlic powder 1 teaspoon paprika ½ teaspoon salt ½ teaspoon black pepper

Toppings : ½ cup BBQ sauce 6 slices bacon, cooked and crumbled 1 cup shredded Monterey Jack cheese ½ cup shredded cheddar cheese 1 medium tomato, diced 2 green onions, thinly sliced

Instructions

  • Prepare the chicken: Pat the chicken breasts dry. If they're very thick, gently pound them to an even thickness. Season both sides with garlic powder, paprika, salt, and black pepper.
  • Cook the bacon: Cook the bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate, then crumble once cool.
  • Sear the chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook for about 5–7 minutes per side, depending on thickness.
  • Add BBQ sauce: Spread BBQ sauce evenly over the top of each chicken breast.
  • Add bacon and cheese: Sprinkle the crispy bacon over the chicken, followed by Monterey Jack and cheddar cheese.
  • Melt the cheese: Transfer the skillet to a preheated 375°F (190°C) oven and bake until the cheese is melted and the chicken reaches 165°F (74°C) internally.
  • Add fresh toppings: Remove from the oven and let the chicken rest for a few minutes. Top with diced tomatoes and sliced green onions.
  • Serve: Serve warm with your favorite side dishes.

Notes

  • Pound thick chicken breasts to an even thickness for more consistent cooking.
  • Use your favorite smoky or sweet BBQ sauce.
  • Monterey Jack melts beautifully, while cheddar adds extra flavor.
  • Add jalapeños or Pepper Jack cheese if you like spicy chicken.
  • Keep the fresh tomatoes and green onions until after cooking for the best texture.
  • Store leftovers in an airtight container in the refrigerator for 3–4 days.
  • Freeze cooked chicken without the fresh toppings for up to 3 months.
  • Always check the thickest part of the chicken with an instant-read thermometer; it should reach 165°F (74°C).
