Ingredients

For the Casserole

4 cups cooked chicken, shredded or diced 8 oz cream cheese, softened,1 cup sour cream,1 can (10.5 oz) cream of chicken soup,2 cups shredded sharp cheddar cheese, 1 tsp garlic powder1 tsp onion powder ½ tsp paprika ½ tsp salt ½ tsp black pepper 1 tsp dried parsley

For the Topping

1½ cups crushed Ritz crackers,4 tbsp unsalted butter, melted2 tbsp grated Parmesan cheese (optional)1 tsp dried parsley

Instructions

  • Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  • In a large bowl, combine the softened cream cheese, sour cream, cream of chicken soup, garlic powder, onion powder, paprika, salt, black pepper, and dried parsley until smooth.
  • Fold in the shredded cheddar cheese, then gently stir in the cooked chicken until evenly coated.
  • Transfer the mixture to the prepared baking dish and spread it into an even layer.
  • In a separate bowl, mix the crushed Ritz crackers, melted butter, Parmesan cheese (if using), and dried parsley until coated.
  • Sprinkle the cracker mixture evenly over the casserole.
  • Bake uncovered for 30–35 minutes, or until the filling is hot and bubbly and the topping is golden brown.
  • Let the casserole rest for 10 minutes, garnish with fresh parsley if desired, and serve warm.

Notes

• Use rotisserie chicken to save time.
• Freshly grated cheddar melts better than pre-shredded cheese.
• Prepare the casserole up to 24 hours in advance and refrigerate before baking.
