Instructions
Slice the chicken breasts in half horizontally to create four thin cutlets. Season both sides with salt, pepper, Italian seasoning, and paprika.
Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden brown and cooked through. Transfer to a plate.
Reduce the heat to medium and melt the butter in the same skillet. Add the minced garlic and cook for about 30 seconds until fragrant.
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
Stir in the heavy cream and bring to a gentle simmer.
Add the Parmesan cheese gradually, stirring until completely melted.
Mix in the chopped sun-dried tomatoes and fresh spinach. Cook for 2–3 minutes until the spinach has wilted.
Return the chicken to the skillet and spoon the sauce over the top. Simmer for another 2–3 minutes.
Garnish with fresh basil if desired and serve immediately.
