Ingredients

  • 2 large boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons butter
  • 4 garlic cloves minced
  • ¾ cup chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • ½ cup chopped sun-dried tomatoes
  • 2 cups fresh spinach
  • Fresh basil for garnish (optional)

Instructions

  • Slice the chicken breasts in half horizontally to create four thin cutlets. Season both sides with salt, pepper, Italian seasoning, and paprika.
  • Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden brown and cooked through. Transfer to a plate.
  • Reduce the heat to medium and melt the butter in the same skillet. Add the minced garlic and cook for about 30 seconds until fragrant.
  • Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
  • Stir in the heavy cream and bring to a gentle simmer.
  • Add the Parmesan cheese gradually, stirring until completely melted.
  • Mix in the chopped sun-dried tomatoes and fresh spinach. Cook for 2–3 minutes until the spinach has wilted.
  • Return the chicken to the skillet and spoon the sauce over the top. Simmer for another 2–3 minutes.
  • Garnish with fresh basil if desired and serve immediately.

Notes

  • Use freshly grated Parmesan cheese for the smoothest sauce.
  • Avoid boiling the cream to prevent the sauce from separating.
  • Chicken thighs can be used instead of chicken breasts.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
